All of my courses reflect the interdisciplinary methodologies I employ in my research, and their subject matter naturally draws on my interests in race, environment, and economy. My assignments frequently push students to re-evaluate what constitutes source material for historical inquiry, and challenge undergraduates to incorporate oral histories, maps, photographs, natural science scholarship, objects, field data, and even physical landscapes into their research.

Samford University published a feature on the types of diverse assignments in my Food and History course and the experience's value to students.

I have also published a short piece on teaching environmental history in Civil War / Reconstruction classes for Muster, the blog of The Journal of the Civil War Era
